KC Wild Wings™ get Senate approval in New York.

Farmland KC Wild Wings were a big hit at the New York
State Fair and with Senator Hillary Rodham Clinton.
The OPERATOR spoke with William Cornelius, executive
chef and local television food host for two prominent
restaurants on Seneca Lake in upstate New York: Petioles
Restaurant, of the Logan Ridge Winery, and Veraisons
Restaurant of Glenora Wine Cellars. Here’s what
he had to say about KC Wild Wings and garnering the
senator’s praise.
OPERATOR: How did you hear about KC Wild Wings?
CHEF CORNELIUS: Our rep, Timothy Rielly, introduced
me to KC Wild Wings. I was blown away with the product.
OPERATOR: How so?
CHEF CORNELIUS: The versatility of the product and
how little you need to do to it to offer (customers)
a wonderful meal.
OPERATOR: Can you give us some examples?
CHEF CORNELIUS: I’ve served it as an osso buco
for some very fine, upscale dinners. And I’ve
removed it from the bone for pork sandwiches.
I’ve buffaloed it. I’ve barbecued it.
I’ve done a garlic cream sauce with it. Anything
you can do with a rib or a chicken wing, you can do
with that product.
Also, here at Logan Ridge we make a loganberry barbecue
sauce from our number-one-selling loganberry wine. The
wine is reduced and added to our barbecue sauce.
OPERATOR: How did you prepare the wings for Senator
Clinton?
CHEF CORNELIUS: Welch’s® actually sponsored
Senator Clinton’s event, now that I think of it. I made
a great Welch’s Jelly barbecue sauce for that.
We served that recipe to the
Senator and her crew when she was touring the Finger
Lakes area and it was a huge hit. We called them “Lollipop
Ribs”.
OPERATOR: We understand you were also a big hit at
the New York State Fair?
CHEF CORNELIUS: At the fair, I do a daily cooking
demo in the art and homes center. Senator Clinton was
also at the fair. Unsolicited, she commented on the
meal she’d had in the Finger Lakes. It was pretty
neat, getting that kind of feedback. It was nice to
know she was still talking about us days after.
OPERATOR: Anything else?
CHEF CORNELIUS: I can’t say enough about the
product. Right down to the way it’s packed, with
the three sleeves within the case. It’s very convenient
to run it as a feature because you don’t have
to have nine pounds of it going all at one time.
